Fish, meat, and vegetables—the cuisine of Dalmatia is simple yet diverse. One of the must-try dishes is pašticada, a traditional dish said to have originated in Split, made with meat that’s marinated for a long time in spiced vinegar and then slow-cooked in a rich sauce. Another local speciality is brujet, a spiced fish stew prepared with the catch of the day, vegetables, and wine.
